I've been having a couple of issues with XBMC (3.5.1) defaulting to 720x480i instead of running at 1080i. After I load up the default dash and enable 1080i, it works fine so long as I don't mess with the visual settings or restart/turn off the console; then it defaults.
This is happening on two consoles: Both are pal and have had enigma used on them which seemed to be successful, the first I was trying with has an x3 chip installed and the other is a softmod. I know it isn't the tv as I have another box (XBMC 3.5 Beta 2) running completely fine with my desired settings on this tv so that also rules out the cable. Any help is appreciated.

I have a similar problem!
Since today I try to use an HDTV Component AV Cable (with resolution: 1080i), but when logging in XBMC free RAM of 36MB drops below 4MB.
Directly on the Xbox has crashed - no function!
Testing with different skins are give different free RAM. Transparency (x4x) = under 10MB (default font) Transparency (x4x) = under 5MB (arial font) Confluence = under 14MB PM3.HD = above 20MB
I keep trying to solve the problem.

Things will not work on 1080 ,
720 is the max you can hope for as far as I have been told before .
