I'd say you're better off connecting from Mac to Xbox through FTP, and get the stuff out (as opposed to from Xbox to Mac, which should be possible but the UI will obviously be harder to navigate).
ftp://xbox:xbox@YOUR_XBOX_IP/

XBMC4Xbox FTP server was found to be be slower than other dashboards, but it's still a way to go. Enable in Settings > Network.

If you don't know where your Emulators and Games are stored, go into Main > Programs and look for Emulators and Games entries, press White and Edit Source to see the real paths behind them.

Different FTP server and network code I guess - although you can improve transfer if you increase the number of server and client threads, that would allow for multiple files to be transfered at the same time.

Although this post is about something slightly different, you can see in there the "Number of Threads" / "Maximum User Count" settings in the XML configuration file. Don't go nuts and raise the value too high, go incrementally and see which provides you with best results (too many disk reads and network transfers at the same time might actually make it worse than better).

Match that with the number of simultaneous connections from the client, keeping an eye on the "Failed Transfers" tab or the console section in say FileZilla.
