It is possible to have both drive connected at the same time using linux. The problem is that all distro are on 2.x kernel. Maybe the noise from the HDMI board's power input going back into the Xbox 5V power rail is causing issue with the video output of the Xbox itself; especially if you selected a power source near the AVIP port.
