Problems like that with the power and/or eject buttons with a softmod are unusual and the typical explanation is the beginnings of trace rot. But your description of it actually booting to a black screen with one but with the other resetting to your main dash doesn't really fit in with that either. ...

You really should not bother with PAL at all. Switch the console to NTSC and leave it there. You'll rarely ever need to swap it back to play the small number of games that are PAL region locked. If the game doesn't support widescreen then black bars either side of the image area would be expected on a widescreen display. 480p on the Xbox is 640 x 480 progressive scan ie. 4:3 if the game does not support widescreen. According to the Xbox games' "alternative display modes" list Spiderman 2 does not support WS but you should be able to get it displaying in 480p.

As long as your Xbox DVD drive is working OK the simplest way of doing this is by using a disc like HeXEn although my preference would be to use AID. Can't help you directly because the Xenium OS which is pre-installed on the chip your Xbox is using is foreign territory to me. Any mod hard or soft doesn't affect the ability to play original discs. It adds the ability to play backup discs (DVD-R/ImgBurn) and by install using FTP. It's a v1.6 so there is a possibility it is a 480p issue and your TV doesn't support 480i via Component or whatever cable type you're using.
